Favorite Low Carb Dinner Recipes

Lately we've been trying to cut out extra carbohydrates from our diet, especially at dinner time.

We have had three meals lately that were so amazing I just had to share!

Cauliflower Pizza
No no, not actually cauliflower on a pizza but rather using cauliflower with a ricing technique to make it into the "crust".

Here are a few photos of the making of our pizza and here you can find the recipe for the crust.

Essentially, you use a food processor to "rice" the cauliflower then microwave it to cook it.

You mix it with a mixture of an egg, seasoning and cheese then shape it into pizzas and pre-cook it in the oven before adding the toppings.

Then, add whatever toppings you like and broil until the cheese is bubbly and delish.

The edges got a little well-done but it was SO good. We've had it twice so far!

Another of our recent favorites has been the...

Spinach Cannelloni (original recipe)

This was so good we have only had it once because making the "cannelloni" is a little time-consuming but it was really really good!

We used frozen spinach and light cream cheese for the filling (along with the seasonings).

I made the "cannelloni" from the eggs and filled each one with the spinach mixture.

Then rolled them up and put them into a 9x13 inch baking dish.

Then the top was sprinkled with cheese and baked until melted and bubbly.

These were SUPER good!!

Last but not least is the homemade cheese crackers.

These will seriously blow your mind!

Start with a slice of american cheese. It MUST be the deluxe cheese (not the individually wrapped super-processed kind).

Take the slice of cheese and cut it into 16 pieces (yep, they will be very tiny) and place them around the edges of a piece of parchment paper). Put the parchment paper in the microwave and nuke it for 30-60 seconds. (51 seconds was perfect in our microwave).

They come out looking like this.

I seriously couldn't make them fast enough. Jim and I were eating them as soon as they came out of the microwave and best part? NO carbs! :)

These are just a few of my most recent finds on Pinterest for low-carb recipes that are thinking a little "out of the box".

If you try them, let me know how you like them!
